Brie and Apple Grilled Cheese

Let me start by saying that a sandwich like this a BIG splurge for me. I love grilled cheese sandwiches but I never, ever get/make them because I can almost always find a better choice. However, once is blue moon there’s nothing like an ooey, gooey grilled cheese. And this one, in particular, just hits the spot.

The combination of raisin bread, brie, Granny Smith apples, caramelized onions, and a little whole grain mustard makes the best sweet and savory combo EVER. I never would have considered raisin bread for something like this but it’s really the key component. This sandwich is so tasty and, seriously, worth every single calorie!

Brie and Apple Grilled Cheese

Apple + Brie Grilled Cheese

Makes 2 sandwiches

4 slices of raisin bread (I used the Whole Foods brand)
8 slices of brie cheese
1/4 Granny Smith apple, thinly sliced
1/2 yellow onion, thinly sliced
2 tsp whole grain mustard
4 tsp unsalted butter, softened
1 tsp olive oil

Caramelized Onions – Coat the bottom of a skillet with olive oil and heat to medium/high temperature.  Add the onions and toss in the hot oil.  Spread the onions out evenly in the pan and let cook, stirring occasionally.  Continue to cook until onions become very soft and develop a deep caramel color.

Heat a large non-stick pan to medium/low heat. Assemble the sandwiches – mustard on one side of the bread, brie, apples, caramelized onions. Spread butter on the outside each piece of bread. Place sandwiches in the pan and cover with a pieces of tin foil. The tin foil helps to keep the heat in and melt the cheese. Keep a close eye on the bread – the sugar in the raisins can cause it to burn a little more quickly than plain bread. When the bread is golden brown and crispy flip the sandwich over. Recover with the foil and finish cooking.

Serve with a little side salad – greens always make me feel better about a splurge.
