Olive Oil Ganola

I really love granola. Especially homemade granola. It’s super easy and so much better than anything you can get at the store. The olive oil makes it a little different. And by differernt I mean amazing. I like dried apricots and pistachios in my granola but you can add pretty much anything that appeals to you. Dried sour cherries and almonds, cranberries and pecans, golden raisins and walnuts…

Granola is one of my favorite homemade gifts to give around the holidays. It stays fresh for at least a month, is cost efficient, and looks super cute in a mason jar with a pretty bow.

This stuff is addictive. I’m warning you now…

Olive Oil Granola

Olive Oil Granola

3 1/2 cups old fashioned oats
2 cups unsalted pistachios, hulled
1 cup dried apricots, chopped
1/2 cup extra virgin olive oil
1/2 cup brown sugar
1/2 cup maple syrup
1 tsp kosher salt
1 tsp ground cinnamon
1/4 tsp nutmeg

Preheat oven to 300 degrees.

In a large bowl mix together the oats, pistachios, olive oil, brown sugar, maple syrup, salt, and spices. Line a large jelly roll pan with parchment paper and spread the mixture out in an even layer. Bake for 45 minutes or until well toasted. In the last 10 minutes of baking add the apricots to the mixture.

Serve with fruit and yogurt or, my preference, cottage cheese.
